I'm jealous, you're triggering all sorts of memories of our vacation there. You even got to do blackwater rafting, which we missed. Congratulations! Random cool places to visit in South Island: Pancake Rocks, on the west coast highway, south of Charleston in the Paparoa National park; Fox Glacier (Ice climbing!); Christchurch (beautiful college town).
